This recipe used to be one of the quick breakfast my mom used to make for us when we were kids. Its super easy and very filling and can be made in a jiff. I sometimes box this as lunch for my kids and they love it.

Ingredients:

Potato — 2 medium (boiled and mashed)

Bread –Any kind/brand

Salt –to taste

Turmeric powder –1/4 tsp

Garam masala –a pinch

Green Chilies –2 (finely diced)

Ginger –1/4 inch piece (finely shredded)

Coriander leaves –2 Tbsp (finely chopped)

Procedure:

1. In a bowl combine mashed potatoes, salt, turmeric powder, green chillies, ginger, garam masala and chopped coriander leaves.(Note: If you are making this bread for kids, you can omit green chillies)

2. Heat the griddle and when hot, top a slice of bread with potato mixture and toast the bread on both sides. Serve hot.

Toast evenly on both sides in a griddle. Serve immediately.
