I had store bought pizza dough sitting in the refrigerator ready to blow out of the packet anytime and I didn’t want to make the regular pizza(boring!!!). So off I went in search of a vegetarian recipe that could be made with pizza dough and I landed at an empanada recipe. The name really got me curious and I found that empanadas are the Mexican equivalent of Italian calzones. My daughter loves any dish thats made of corn and this dish became one of her favorite as it has corn in it. The combination of black bean and corn always amazes me and the taste of crispy pizza crust outer layer and the steaming hot bean and corn filling was just perfect.
Ingredients:
Pizza dough — 1 pack (store bought). If you are planning on making the pizza dough then make the dough for one large pizza
Onions — 1 (chopped in to small cubes)
Ginger-garlic paste –1tsp
Tomato — 2 small (finely cubed)
Black beans — 1-15oz can (washed, rinsed and drained)
Corn (frozen/fresh) — 1/2 cup
Coriander powder — 1 tsp
Cumin powder –1/2 tsp
Chilli powder — 1 tsp
Garam masala — 1/2 tsp
Taco seasoning — 1 tsp (optional)
Coriander leaves — 1Tbsp
Pepper Jack Cheese –3 slices (cheese of your choice can be substituted)
Salt — to taste
Oil –1 tsp
Method:
1. In a kadai, add oil and sautee onions and ginger garlic paste until onions turn translucent. Add tomatoes and cook them till they turn soft. Now add drained black beans, corn and all the powder seasonings (coriander, cumin, chilli, garam masala, taco seasoning) and salt. Combine well till all the moisture is evaporated. Switch off the flame and let it cool. Keep aside.
2. Thaw the pizza dough as per the given instruction, divide them in to 3 equal halves. Make a round shape, add the filling in the center and cover the dough. Seal the ends nicely and press them with a fork.
3. Preheat oven to 350F. Bake the empanadas in the oven for 15-20 minutes or until the outer crust turns golden brown. Serve immediately and Enjoy!!!
Sautee onion, ginger garlic paste, tomatoes. Add black bean and corn and mix well. Let it cool and fill the pizza dough with the filling and bake in 350F till they turn golden brown. Enjoy!!!
