I’ve tried many types of diet and weight loss regimen in the past and they just don’t work. I’ve also been told that I’m extremely persistent when I need something and losing weight was my goal. So after many research I understood that no amount of binge dieting and lack of exercise will help me reach my goal unless I change my way of living. I started eating healthy and exercising and I wouldn’t say its an easy path but the results are quite astonishing. I am 10 pounds closer to my goal weight and its taking more time to lose the unwanted pounds as I get closer to my goal. However, I feel strong, fit, and more energetic than I was few years back. Many people ask for advice and assume there’s just some magic pill or substitute that’ll help them lose weight instantly. Unfortunately I don’t think there’s magic to healthy weight loss and a huge part of the weight loss journey is to not give up and be patient.
Our family enjoys going to a local salad buffet restaurant every now and then and we enjoy eating salad at least 2 to 3 times a week. We usually make our own salad mixes and dressings and my daughter loves salad. According to her, there’s nothing like the taste of fresh ingredients with burst of flavors and crunchy texture of a salad. This mix is a recreation of one of salad mixes we get from our local wholesale store. I love the poppy-seed dressing in this mix and the cranberries and pumpkin seeds give the right crunch and flavor to this salad. Hope you try it soon. Enjoy!!!
- Kale -- 1/2 cup (chopped)
- Broccoli Stems -- 1/2 cup
- Cabbage -- 1/4 cup (finely shredded)
- Brussel Sprouts -- 5 to 10 sprouts (sliced)
- Cranberries -- 1/4 cup
- Roasted Pumpkin Seeds -- 1/4 cup
- Poppy Seed Dressing -- as needed
- In a large bowl toss all the ingredients until well mixed. Adjust the dressing to taste. Serve immediately. Leftover salad can be refrigerated but use it within a day. Enjoy!!!
