“Tres Leches” in Spanish mean “Three Milk” and as you can now guess this cake is a sponge cake or a butter cake immersed in three kinds of milk (evaporated milk, condensed milk, and heavy cream). This cake is very popular in many birthday parties and I’ve been wanting to make this cake for a very long time. Tres Leches is pronounced as “Trey Lay Chays” and I would love to learn the right way to pronounce new words that I come across. I’m not a linguistic and it takes some effort for non-native speakers like me to pronounce the words correctly. Hold your thought I’m not saying you need to learn the pronunciation of “Tres Leches” to eat this cake as the new saying goes—“You can have your cake and eat it too”.

The base cake is a sponge cake and making this cake with an electric hand/stand mixer really helps and your hands will thank you later. I left the cake to soak with the milks overnight in the refrigerator and true to the word the cake did act like a sponge and ate up all the milk. This cake is truly one of a kind and its very delicious, spongy and moist. They don’t need much decoration in terms of frosting, simple whipped frosting and berries will make the already sought out cake a tad more appealing. Enjoy!

In a bowl, sift flour and baking powder. Set aside. In a large mixing bowl whip egg whites using a hand/stand mixer with whisk attachment until frothy.

With the mixer on add sugar little by little and beat to stiff peaks. Add yolks one at a time making sure they are blended well after each yolk.

Add flour+baking powder mixture in 3 additions alternating with whole milk in 2 additions. Preheat oven to 350 degrees F. Grease 9 to 10 inch round cake pan with at least 2 inch high on the sides. Lightly dust the greased pan with flour and line with parchment paper. Spray or grease the parchment paper. Pour the batter into the prepared baking pan and bake in the preheated oven until the tooth pick inserted comes out clean about 30 minutes. Cool the cake for about 10 minutes.

While the cake is baking mix the milks, in a medium bowl mix sweetened condensed milk, evaporated milk, 1 cup heavy cream, and vanilla extract. Invert the cake into a platter or wide container with at least 1 inch high on the sides. Using a thick skewer pierce the cake throughout the cake.

While the cake is still warm pour the milk mixture on the cake. Cover and refrigerate until cold at least about 3 hours or overnight. Spread whipped frosting on top, add berries or spread ground cinnamon, slice, sit back, and Enjoy!

Tres Leches Cake

Ingredients

  • All Purpose Flour -- 1 1/2 cups plus more for dusting
  • Baking Powder --1 Tbsp
  • Eggs -- 4 (Separated)
  • Sugar -- 1 1/2 cups
  • Whole Milk -- 1/2 cup
  • Sweetened Condensed Milk -- 1 (14 ounce can)
  • Evaporated Milk -- 1 (12 ounce can)
  • Heavy Cream -- 2 Cups
  • Vanilla Extract -- 1 Tbsp
  • Powdered Sugar -- 1 Tbsp
  • Ground Cinnamon -- 1/2 tsp (optional)
  • Strawberries -- handful

Instructions

  8. In a medium bowl combine the remaining 1 cup of heavy cream and powdered sugar. Using an electric mixer beat the mixture until soft peaks form. Spread the whipped cream on top of the cake and sprinkle with ground cinnamon if using and arrange the berries on top. Enjoy!
