I love challenges, especially the ones that make you feel the adrenaline rush. This month’s Daring Baker’s challenge was to bake battenberg cake. I’m a vegetarian by brought up and by choice but I do eat eggs in concealed form as in cakes and muffins. I’m getting to be a baker, yesterday I wanted to experiment with baking (blaming on my new hand mixer). I had some leftover pineapple pieces sitting on the kitchen counter top and couldn’t resist the thought of making a cake out of it.
