Marble cake is a joy to make as the designs and the swirls of two different batters are unique each time I make. There is no pressure in making the patterns perfect and the key is to go wild and have as much fun as you can in making the patterns to the wildest of your imagination. I don’t think my kids heard anything about this cake beyond the word Mango and that’s how crazy they are for this delicious tropical fruit. Even though it’s still cold winter and it isn’t mango season we are blessed with ready-made mango pulps year round and that makes this cake doable anytime of the year. I need an excuse to eat mango and I’m all for any recipe that calls for them in any form and luckily my kids have inherited the same taste as mine. The best part of this recipe is that they are eggless and butter less version and I didn’t miss either ingredients in this cake. I’m gonna try the egg version to see if there is any difference in texture or taste and I’ll update this post once I do.

Combine sugar and oil in a bowl. Add mango pulp and mix.

Add butter milk, milk, vanilla extract to the mango pulp and mix well. In separate bowl mix all-purpose flour, baking powder, baking soda, salt and mix well.

In a small bowl mix cocoa powder with 2 Tbsp of warm water and mix well. Add the all-purpose flour mix to the mango pulp and mix till all the ingredients are well incorporated. Remove half of the mango batter in separate bowl. To one half of the mango batter add the cocoa paste and mix till well blended. Now you half two batters one mango and another chocolate.

Line the bottom of the loaf pan with parchment paper. Scoop mango and chocolate batter alternatively in the pan. Using a bamboo stick or tooth pick make patterns. This step is where your imagination can run wild. Preheat oven to 350 F. Bake the cake for 50 to 55 minutes or until the tooth if inserted comes out clean. Cool for few minutes and remove them to cool further on a cooling rack. Once completely cooled, slice them and serve. Enjoy!!!

Mango Chocolate Marble Cake [Eggless]

Ingredients

  • All Purpose Flour -- 2 cups
  • Baking Powder -- 1 1/2 tsp
  • Baking Soda -- 1/2 tsp
  • Salt -- 1/4 tsp
  • Cocoa Powder -- 1/4 cup (mix with 2 Tbsp of warm water)
  • Vanilla Extract -- 1 tsp
  • Mango Pulp -- 1 cup (I used canned pulp)
  • Sugar -- 3/4 cup (If you are using sweetened pulp then reduce the sugar little less than 3/4 cup)
  • Oil -- 5 Tbsp (I used canola oil)
  • Milk -- 1/4 cup
  • Butter milk -- 1/4 cup ( I used Fage)
