I had some mint chocolate filling left from my mint chocolate thumbprints that I baked. I wanted to make better use of the chocolate filling, so I baked these surprise chocolate cookies. The name has a surprise because of a surprise marshmallow topping that is covered beneath the chocolate filling. The original recipe calls for an egg but I tried to make it eggless and in the process had to adjust the flour measurement. In the end the cookies were soft and chewy with squishy marshmallows disguised beneath the mint chocolate topping. My kids just had a blast with the cookies and I had to hide it from my cookie monsters. I’m sending this entry to “Kids Delight” started by Srivalli and hosted by Priya Suresh.

Ingredients:

2 cups all-purpose flour

3/4 cup unsweetened cocoa powder (not Dutch-process)

1/2 tsp baking soda

1/2 tsp coarse salt

1/4 cup (1/2 stick) unsalted butter (room temperature)

1 cup granulated sugar

4 oz apple sauce

1 1/2 tsp vegetable oil (I used olive oil)

1 tsp baking powder

1/2 cup whole milk ( I used half and half)

1 tsp pure vanilla extract

About 20-25 marshmallows

Procedure:

1. Preheat oven to 375F. Sift together flour, cocoa powder, baking soda, baking powder, salt in a bowl.

2. In a food processor or electric mixer fitted with paddle attachment, mix butter and sugar till pale and fluffy. About 2 minutes. Mix in apple sauce, oil, milk, vanilla extract. Mix in flour mixture, 1/2 cup at a time, until combined.

3. USing a ice cream scoop, drop dough on to baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies, rotating sheets halfway through, until firm. About 10-12 minutes. Immediately press 3 to 4 marshmallows on top of each cookie. Bake until marshmallows begin to melt, 2 to 3 minutes more. Let cool completely on sheets on wire racks.

4. Now add the mint chocolate filling on top of the marshmallow. For recipe on filling look at the mint chocolate thumbprint recipe. Let it stand until set, about 10-15 minutes. Enzoy the cookies with surprise marshmallows that hides creating a delightful surprise for the person who bites it.
