Just like my mom, my kids love baked goods. They constantly demand that I bake something for them. My daughter asked for a brownie and my son wanted a muffin. Both of them had the right reasoning behind their demand and I was just sitting, trying to see if I can get them to a consensus. It’s hard to be caught in the middle without being biased you know!!! Then finally after all the bickering stopped I declared I’ll make something that’ll make both of them happy. I rushed to the kitchen with a double chocolate brownie recipe from one of the books and was trying to see if I can keep up my word and make it eggless. Finally, as I was making it, the brownie mixture was more thick and I spooned them in to muffin cups and both my kids got what they wanted. Whew!!! I came out of the kitchen with a trophy of my kids covered with chocolate around their mouth beaming with happiness. 6 Tbsp unsalted butter

6 ounces semi sweet chocolate coarsely chopped

1/4 cup unsweetened cocoa powder

1 cup all-purpose flour

1 tsp baking powder

1/4 tsp coarse salt

1/4 cup apple sauce

1 cup sugar

2 Tbsp pure vanilla extract



1. Preheat oven to 350F. Melt butter, chocolate, and cocoa powder on a double boiler (a bowl on top of a pot of simmering water, make sure the bowl doesn’t touch the water). Let it cool and keep aside.

2. Mix flour, baking powder, and salt in a bowl. Add sugar, apple sauce, and vanilla extract and mix well for about 4 minutes. Add melted chocolate mixture and mix well until combined.

3. Spoon in a tbsp of batter in to each mini muffin cups and bake in the oven until done, about 15 to 20 minutes. Cool in wire rack and enjoy.

Melt chocolate, cocoa, and butter.

Combine flour, salt, baking powder until pale.

Mix chocolate mixture, sugar, vanilla, apple sauce and bake at 350F for 20 to 25 minutes until done.
