Last weekend was my daughters solo recital, hosted at our house. We were told there are going to be about 12 kids participating altogether. I was informed well in advance that I should be making some snacks for everyone. As the break is only for 10-15 minutes, I didn’t want to make anything elaborate. Along with samosas and other snacks I wanted to bake something eggless for the kids. I have made this date cake numerous times and it has never failed me. Taken from here, this cake is so tasty and mouth watering and very fluffy. Usually I bake it in a round cake pan and it vanishes in a day or two. This time, since I was making it for the kids, I spooned it in mini muffin pans and the result was so delicious. Dates (pitted)– 18

Milk — 3/4 cup

Sugar — 3/4 cup

All purpose flour — 1 cup

Oil/Butter(room temperature) — 1/2 cup

Baking Soda — 1tsp

Almonds/Cashews/Walnuts (optional) — 1 Tbsp


1. Soak dates and warm milk overnight. I prefer, heating milk and dates in microwave for about 2 minutes on high. (Note: You can also heat the dates and milk in stovetop if you don’t have or use microwave).

2. Grind the softened dates along with the milk in to a smooth paste. Mix in sugar and blend everything well. Add oil/butter and mix until smooth.

3. In a separate bowl mix all purpose flour and baking soda. Now add the flour mixture to the date mixture little by little. Combine well. Add chopped nuts, if using and mix well.

4. Preheat oven to 350F. Grease a round cake tin or muffin pan and add the batter to the pan. Bake for 35-40 minutes or until the tooth pick inserted comes out clean. (Note: The baking time for muffin is around 10 mins. So if you are baking in muffin pan, check the pan often so as to not burn the cake). Enjoy!!!

Make the date-milk paste, combine sugar and butter well. Mix flour and baking soda together. Add little by little to the date mixture and beat it well. Spoon in muffin pan/ cake pan and bake at 350 F till golden brown.
