I already have banana muffins with chocolate chips in my blog. The recipe that I already have is an eggless version and this one (taken from here)does have egg along with bananas that were so pathetically crying like a baby to be used in some form or the other. Eat with caution as they are very addictive, you are pre-warned! These muffins make perfect breakfast for your Christmas morning and don’t forget to add some love into your baking to make it a bit special also watch out for Santa …he might skip cookies this year and grab these muffins instead and you’ll end up with HO!HO!HO!
Having a jump-start powered by the goodness of bananas these muffin have the right amount of sweetness making it hard to stop with one. I have started to like bananas only in baked goodies and these muffins were no exception. I baked them in mini-bundt pans and when I flipped them upside down they looked like little people and with a candy-cane hat they look adorable. Don’t they? I especially like the first one in bottom row, Mr.Grumpy. Which one do you like?
Step-by-Step Pictorial:
In a large bowl, mix flour, salt, baking powder, and sugar. In another bowl mix melted butter, egg, vanilla essence, milk, and mashed bananas.
Add the banana mixture to the dry flour mixture little by little. Mix gently, do not over-mix. Fold in chocolate chips. Pour batter into muffin molds and bake at preheated 350F oven for 25 minutes or until the muffins top are golden brown and tooth pick inserted comes out clean except with melted chocolate. Note: It took only 12 minutes in my oven. Oven timings may vary so watch out.

- Unbleached All Purpose Flour -- 1 1/2 cups
- Sugar -- 2/3 cup
- Baking Powder -- 1 1/2 tsp
- Salt -- 1/4 tsp
- Mashed Ripe Bananas -- 2 large (about 1 cup)
- Egg (large) -- 1
- Vanilla Essense -- 1 tsp
- Unsalted Butter (melted) -- 1/2 cup
- Milk -- 1/4 cup
- Semi-sweet Chocolate Chips -- 3/4 cup
Instructions
- Preheat oven to 350 F.
- In a large bowl, mix flour, salt, baking powder, and sugar. In another bowl mix melted butter, egg, vanilla essence, milk, and mashed bananas.

- Pour batter into greased muffin molds to about 3/4 full. Bake for 25 minutes or until the muffins top are golden brown and tooth pick inserted comes out clean except with melted chocolate.
