My family is known for their penchant for variety in their food choices. Naturally the brain storming and the constant changes in their taste buds adds a big toll in planning menus on a day-to-day basis. I’m always on the lookout for new dishes to try and many a times I try recipes just because the name caught my eye. This recipe is quite easy to make and are loaded with veggies, another score for team mom and subtlety is the secret here. The rolls are baked to crisp and when served hot they are flaky and scrumptious similar to puff pastries. The filling is just a mix of veggies on hand and they are diced and hidden inside the rolls making sure you get your daily serving of veggies without dropping a hint. No complaints here.

This dish can be made ahead but I would strongly advise not to reheat in microwave as they tend to make the Taquitos soggy inside of crisp and flaky. Toaster oven or Conventional oven would be the recommended source to reheat if desired. As they are very similar to egg rolls or spring rolls the veggies in the filling can be conjured as per your imagination. They would make an excellent choice for after school snacks, potlucks or finger foods and are definitely on my list of potluck recipes.

In a large skillet, heat olive oil add minced garlic and sautee for a minute. Add chopped onions and fry till they turn translucent. Add zucchini, spinach, carrots, mushroom, taco seasoning, salt and sautee till the veggies are cooked to crisp and spinach wilts. Remove from heat and let it cool for few minutes.

Spoon about 1 tablespoon of veggie filling on each tortillas. Top with cheddar and Mexican cheese. Fold and wrap the tortillas, rolling tightly.

Arrange the tortillas seam side down on a baking sheet. Spray with cooking spray and bake for 10 minutes or until the bottom is golden brown. Flip the tortillas and bake for another 5 minutes. Serve hot with Mexican sauce or salsa, avocado, and sour cream. Enjoy!

Vegetable Taquitos

Ingredients

  • Extra Virgin Olive Oil -- 2 Tbsp
  • Zucchini -- 1 medium (finely diced)
  • Red Onion -- 1 large (finely chopped)
  • Garlic -- 3 cloves (finely minced)
  • Carrots -- 1/4 cup (Julienne cut)
  • Baby Spinach -- 1 cup (finely cut)
  • Mushrooms -- 1 can (4 oz can-- drained, rinsed, and finely chopped)
  • Taco Seasoning -- 1 Tbsp
  • Salt -- 1/4 tsp
  • Flour Tortillas -- 10
  • Sharp Cheddar Cheese -- 1/2 cup (shredded)
  • Mexican Blend Shredded Cheese -- 1/4 cup

Instructions

  1. Preheat oven to 450 F.
