I know it’s a very long break that I took from blogging and its been quite difficult for me to get back the grove of consistent blogging. I have no excuse but to say I’ve become quite lazy to create or try any new recipes recently. With the constant badgering of my family and annoying reminders that I’m not making anything new I’ve considered to put my lazy gene to sleep(I hope it remains asleep forever…I wish!). Enough with this sordid introduction and as usual my inspiration to jump into blogging and assuage my guilt always comes from my fellow bloggers from blogging marathon.

This recipe is quick, easy, and healthy using low-fat ingredients and whole wheat bread. Our weekend tea time are usually accompanied by fried snacks and with my ever-growing waist line I need to watch what I eat and try to modify to a healthier version of these snacks. Bread rolls are usually stuffed with potatoes and in order to try a new twist I tried substituting potatoes to guacamole spread and low-fat mozzarella cheese for the stuffing. My kids who are also my food critics loved it. I should also add a disclaimer that they are my ardent fans too so I wouldn’t know which way to take it. Step-by-Step Pictorial:

Remove the seed and skin from avocados and with the back of a spoon smash them to pulp. Add salsa, jalapeno peppers, coriander leaves, lemon juice, salt and mix well into a smooth spread. Line a cookie sheet with parchment paper. Preheat oven to 400F. Remove the edges of the bread and slightly roll the bread using a rolling-pin to flat.

Spread the guacamole spread on top. Add a slice of mozzarella cheese and roll the bread and cover the seams.
Lightly butter the bread on all sides and place them seam side down and bake till the bread turns golden brown and the cheese melts. Serve hot with your favorite hot beverage with a side of hot sauce or ketchup. Enjoy!!!

Bread Rolls

Ingredients

  • Bread -- 8 slices (whole wheat/ white)
  • Avocado -- 2 medium size
  • Salsa -- 1/4 cup
  • Jalapeno Peppers -- 4 to 5 slices (finely chopped)
  • Coriander Leaves -- 2 Tbsp (finely chopped)
  • Lemon -- 1
  • Salt -- to taste
  • Low fat fresh mozzarella cheese -- few slices as needed
  • Butter -- 2 to 3 Tbsp

Instructions
